The Hotel

Palazzo di Varignana is the most ambitious country-resort project completed in Emilia-Romagna this century. The estate sits on a hilltop in Castel San Pietro Terme, twenty minutes east of Bologna and twenty-five minutes north of Imola, on land that the noble Bargellini-Bentivoglio family of Bologna acquired in 1705 and built the original Palazzo on. The current owners, the Carpanelli family, Italian industrialists, purchased the estate in 2003 and have spent the two decades since restoring the original Palazzo and six surrounding 18th-century villas (Villa Bentivoglio, Villa Amagioia, Villa Tre Poggi, Villa Aurelia, Villa di Sotto, Villa Cavaliera) into a single integrated luxury resort that opened in stages from 2011 onward.

The 150 rooms, apartments and suites are distributed across the six villas and the original Palazzo, each villa with its own architectural character preserved (the 17th-century painted ceilings in Villa Bentivoglio, the chapel in Villa Amagioia, the panoramic loggia in Villa Tre Poggi). Standard Deluxe Rooms run a generous 35, 40 sq m with stone floors, Italian linens and oversized bathrooms in local travertine; the named suites add private terraces with views to the Apennines south or the Po Valley north. The Junior Suites in the original Palazzo are the most romantic category for couples; the family-connecting layouts in Villa di Sotto and the apartments in Villa Cavaliera handle multi-generational groups particularly well. Every accommodation looks out onto either the olive grove, the formal gardens, or one of the ten pools.

The Varsana Spa is the centre of gravity. At roughly 7,000 square metres across two floors it is the largest five-star spa in Emilia-Romagna and one of the largest in northern Italy, three indoor pools and seven outdoor (including a 60-metre infinity pool with view to the Bolognese hills), a Finnish sauna, a biosauna, a Turkish bath, a salt grotto, an emotional shower circuit, and seventeen treatment rooms running a menu of signature olive-oil-based protocols developed with the estate's own olive groves. Five restaurants cover the brief: II Palazzo (the formal dinner restaurant in the original Palazzo, set under the 1705 frescoes), Aurevo (Mediterranean), Trattoria del Borgo (Emilian classics), Aroma (the daily restaurant), and the poolside bar.

The grounds are the proposition's true distinction. The estate covers some 30 hectares of working agricultural land, olive groves that produce the Varignana extra-virgin olive oil sold across Europe, vineyards that produce the Pignoletto and Sangiovese for the wine list, formal Italian gardens, walking paths, the working farm. The position twenty minutes from central Bologna means you can build the trip around the resort and bring the city in as a series of half-day excursions (Piazza Maggiore, the Quadrilatero market, dinner at Osteria Francescana in Modena), but most guests after two days simply stop leaving. It is the Emilia-Romagna trip distilled to its most considered version.

Varsana is the answer to the long-standing question of where to do a serious northern-Italy wellness week. The 7,000-square-metre spa runs structured five- and seven-night programmes (Detox, Anti-Stress, Olive Oil Vitality), the kitchen at Aurevo handles the spa-diet brief without translating to deprivation, and the grounds give you 30 hectares of hills, vineyards and olive groves to walk between treatments. The estate is too large to feel programmed and small enough to feel personal.

Anniversary

A Bologna-hills anniversary at Varignana is the alternative to the obvious Lake Como booking, comparable estate-scale luxury, half the rates, none of the wedding-party noise. Book a Junior Suite in the original Palazzo for the historic-rooms variant; a villa suite with private terrace for the views variant; the dinner at II Palazzo under the 1705 frescoes is the milestone-night booking. The drive to Modena for an Osteria Francescana lunch the next day handles itself.

Family Holiday

For families the ten pools, including a dedicated children's pool, are the headline. The connecting-villa layouts in Villa di Sotto, the family apartments in Villa Cavaliera, and the children's club programming during summer months handle the kids brief; the spa, the wine list, and the dining handle the adults' brief; and the property is large enough that the two never have to overlap. Tennis, biking, cooking lessons in the kitchen and the working olive harvest in autumn round out the activities.
