The Hotel

The building at Dijver 7 is a 15th-century Bruges merchant's mansion that for most of its history faced directly onto the Dijver canal, the short stretch of water that runs past the Groeningemuseum, the Arents Park and the Onze-Lieve-Vrouwekerk (Church of Our Lady), and forms the most-photographed canal view in Bruges. The property has the city's protected stepped-gable façade, the original 15th-century cellars (now occupied by the indoor pool), and the kind of two-minute walk to the Markt that's the textbook luxury-Bruges location. The conversion to hotel use happened in stages through the 1990s and 2000s; De Tuilerieën joined Small Luxury Hotels of the World on the strength of the canal-facing rooms and the standard of the renovation.

The ground floor restaurant, Mémoire, holds a Michelin star, the chef-owner Christophe Glorieux has held the star consistently for the better part of a decade, and serves the contemporary-Belgian fine dining menu in the original ground-floor rooms with the wood beams and the leaded windows. The hotel runs the breakfast service (generous buffet, hot dishes to order) in the same rooms; the Tuileries Bar in the lounge handles aperitifs and the late-evening Belgian-beer menu by the fireplace.
