The Hotel

Saffire Freycinet opened in May 2010 as Federal Group's flagship Tasmanian property - the company's deliberate move to position Tasmania internationally as a luxury destination on the same register as the great Australian outback and wine-country lodges. The site is on Coles Bay, two and a half hours east of Hobart, looking directly across Great Oyster Bay to the granite peaks of the Hazards mountain range and the entrance to Wineglass Bay beyond.

The Robert Morris-Nunn-led building is a single sculpted curve of timber and glass that explicitly does not read as a hotel - from the road the property is invisible, sheltered by coastal forest; from the Hazards-facing approach it reads as a stranded ship's hull. The 20 suites are arranged in three categories: Luxury Suites (75 square metres) along the curve of the main building, with full-width sliding glass walls onto the bay; Signature Suites (96 square metres) at the corner positions; Private Pavilions, the freestanding villas at the ends of the building, with plunge pools in private courtyards and the deepest views over the bay. In Spring 2026 the property is adding the Saffire Jewel - an 800-square-metre standalone villa for families and small groups.

Saffire is run on the Australian-Luxury-Lodge all-inclusive model. The published nightly rate includes everything: all meals at Palate (a four-course Tasmanian degustation in the evening, full breakfast and lunch through the day), the open bar, the daily roster of complimentary in-residence activities (Tasmanian Devil sanctuary visits, Freycinet Marine Oyster Farm waders, guided Wineglass Bay walks, Hazards summit climbs with the resident guides, sea-kayaking, mountain biking, helicopter scenic flights at supplement), spa hot-stone treatments, the airport-to-lodge transfer from Hobart Airport.

Spa Saffire is a six-treatment-room facility built into the main building with treatments anchored in Tasmanian botanicals (kunzea, sea kelp, leatherwood honey). Palate, under chef Trent Davey, is one of the most decorated restaurant kitchens in Australia outside the capital cities - the produce is essentially a 50-kilometre menu, anchored in the Freycinet oyster, Coles Bay rock lobster, the Bruny Island wallaby and the Cape Grim grass-fed beef. Saffire is the only Tasmanian lodge that genuinely shares the register that Longitude 131 and qualia hold in their parts of the country, and is the de facto Australian counterpart to Aman, Singita and Awasi.

Honeymoon

Saffire is the strongest Tasmanian honeymoon proposition. The Private Pavilions with the plunge pools, the corner-glass Hazards view, and the dedicated lodge-host service are the headline booking; Signature Suites handle the regular brief. The all-inclusive model means the bill is settled before arrival and the trip stays at the same register from check-in to departure transfer.

Wellness Retreat

For a wellness booking, Saffire is the best in Australia. Spa Saffire's six-room programme is anchored in Tasmanian botanicals; the in-residence guided walks include the Wineglass Bay summit and the Friendly Beaches; the Palate kitchen takes any dietary brief reflexively; the digital quiet of the bay (no through traffic, low ambient light) is the closest thing the country has to a full reset.

Anniversary

A Tasmanian milestone anniversary at Saffire - Private Pavilion, in-room degustation arrangement, helicopter scenic flight, the Spa Saffire couples treatment - is the kind of trip the property handles reflexively. The booking-team brief intake is more like a pre-trip consultation than a hotel reservation, and the experience reflects it.
